Awesome 4th of July recipes!
I love the 4th! Not just because of the fireworks, but because of what it stands for. Our independence! Our freedom! I love it! I also love the chance to try out some new recipes on my unsuspecting family. Here are a few I want to try this year, let me know if you try them too!
Got these off Facebook, this one from Linda Mason.
Sweet Hawaiian Crockpot Chicken:
1 cup pineapple juice
1/2 cup packed brown sugar
1/3 cup light soy sauce
2 pounds chicken breast tenderloins.
Add all ingredients to the crockpot and cook on low 6-8 hrs and they should just fall apart. Enjoy!

Have you have ever been to Disney World and had a Dole Whip?
Now you can make your own at home!
2 cans (20 oz. each) DOLE crushed pineapple
2 tbsp. lemon juice
2 tbsp. lime juice
1/3 cup sugar
1 1/2 cups heavy whipping cream
How to make it
Drain pineapple: reserve 2 tbsp. juice.
Place pineapple, lemon juice, lime juice, sugar and reserved pineapple juice in blender.
Cover and blend until smooth.
Pour into two 1-quart freezer zipped bags.
Store bags flat in freezer.
Freeze 1 1/2 hours or until slushy.
Stir pineapple slush gently into whipped cream until slightly blended in large bowl. Return to freezer until completely frozen, about 1 hour and serve.

Avocado and Tomato Salad
4 cups avocados, diced medium
2 cups grape tomatoes or 2 cups cherry tomatoes
2 cups cucumbers, peeled and diced medium
1 cup red onion, diced small
4 tablespoons fresh cilantro, chopped
2 teaspoons fresh garlic, minced
2 tablespoons lime juice
1/4 cup olive oil
fresh black pepper
Lettuce (if you want)
Toss all ingredients in a bowl and top on a bed of lettuce (if desired)
